RECIPE: FRIED FRENCH BEANS


This veg is great served with curries. Mr G made this to go with the Ayam Pati Ski. Here’s the recipe.

Ingredients
1 kg French or snake beans – sliced thinly
4 cloves garlic – minced
1 onion - sliced
1 tsp brown mustard seeds
1 tsp turmeric powder
Salt to taste
½ tsp powdered chicken stock (optional)
½ cup water or coconut milk
2 eggs
1 tbsp veg oil
Salt to taste

Method
Heat oil in a wok and add mustard seeds. When the seeds start to pop, add in garlic and onions. Fry for 1 to 2 mins. Add in sliced beans and fry for 2 mins.

Add in turmeric, salt and powdered stock (if using). Mix well and add in water or coconut milk. Cook till veg is done and most of the liquid has evaporated.

Make a well in the wok and break the eggs in. Fold in the veg and distribute the eggs evenly in the veg. When cooked, remove and serve.

    Yes Mr G loves to cook....I am lucky in that respect. Most of the time, bila I balik dari kerja, nasi dan lauk dah siap masak! Dia selalu tengok bagaimana saya memasak makanan melayu atau cina and then he cooks it. Mr G is a stay home dad, so cooking and baking keeps him occupied!
