RECIPE: PRAWN SAMBAL I


What a better way to heat up one’s body on a cold night. We have not had Nasi Lemak for some time, so decided to make it today. Thank you Mr G for getting all the ingredients prepared for me. That made life so much easier. I felt just like the Iron Chefs – having my own personal helper!

This is one way I make Sambal Prawn.

Ingredients – serves 4 to 6
30 large Green Prawns
2 large handfuls of long dried chillies* – de-seeded and soaked in hot water
8 large shallots*
Half a head of garlic*
½ thumb size galangal*
Small piece of belacan*
1 tbsp tamarind pulp – mixed with ½ cup water and juice extracted
Salt
2 tbsp veg oil

Method
Grind together * ingredients, using the minimum of water. Heat oil in a wok and fry ingredients until oil seeps through and water has evaporated.

Add in prawns, coat well with the sambal and add in the tamarind juice. Cook until prawns are done. Add salt, lift and serve with NASI LEMAK and KANG KONG BELACAN.
