RECIPE: WHIPPED BUTTER

Delicious served with muffins or tea cakes….and easy to make too. Goes extremely well with breads and loaves, especially when they are hot out of the oven!

Ingredients

60g unsalted butter – softened (NOT MELTED)
¼ tsp vanilla extract
1 tbsp icing sugar

Method

In a bowl, beat the butter with a wooden spoon until light and creamy. Sift in the icing sugar, add in the vanilla extract and beat until well blended. Serve with muffins such as my RAISIN MUFFINS.

  3. Hello there - I used to do this with castor sugar and brandy - which is called hard sauce or Brandy Butter in the UK - most delicious on Fruit Cake or on thin white toast, as my then husband used to eat it.
