RECIPE: BUTTER COCONUT CRISPS


Mr G made these last weekend for the kids (and my) lunch boxes. It is very easy to make and delicious. It beats the commercially made cookies any day.

PS: I made Keema and Puri today for dinner. I’ll put it on my blog soon. I will also put up some photos of my trips to Melbourne and country Victoria, as well as my sister-in-law’s yummy sponge cake.

Ingredients
125 g butter - melted
1 cup caster or ordinary sugar (as long as it is not too coarse)
1 ¼ cup self raising flour - sift
1 egg - beaten
Desiccated coconut to cover the cookies

Method
Preheat oven to 180°C and line a cookie tray with greaseproof paper.

In a bowl, mix the flour and sugar. Add in the egg and melted butter and mix thoroughly.

Form into small balls the size of a walnut. Roll into the coconut and place on your tray. Bake for 10 to 15 mins. Cool and store in airtight container.

Hi Tina

Yes they are very crispy and you won't be disappointed. You can also use the base recipe and add other flavourings to it. I have added brandy essence (just omit the coconut)and made brandy crisps!
