RECIPE: LIGHT CARROT CAKE


Saw this carrot cake on BESTRECIPES. Nice and Light. Try it.

Ingredients
185g butter
1 ½ cups caster sugar
3 eggs
2 cups grated carrot
¾ cup walnuts
¾ cup plain flour
¾ cup self-raising flour
1 ½ tsp mixed spice

Icing
60g cream cheese
30g butter
1 ½ cups icing sugar

Method
Cream butter and sugar until light and fluffy. Beat eggs one at a time until well mixed.

Stir in carrots and walnuts. Sift in remaining dry ingredients.

Pour into greased tin and bake for about 1 hour at 180˚c. Cool, ice and serve.

Icing – Beat the cream and butter until light and fluffy. Gradually beat in the icing sugar. When cake has cooled, ice it and serve.

VG, you are too fast for me. Didn't check your blog for a day or two you already had so many recipe up :) I thought you used brown sugar for this until I read the recipe. I guess the cake look dark because of the mixed spice :)

Tks Ummi and Icook4fun. Canberra is cold and windy at the moment, and because of that, I don't get out much in the garden so I cook instead...but my waist line is not loving it! Yes it is brown because of the spice and I must admit i put in more than the recipe cos I like it a bit spicy. You could use brown sugar but you would need to lessen it I guess. I have another recipe...I'll make that the next time and will put it up on my blog. Watch out for some lemon and white choc muffins this weekend! Cheers VG
